本标准规定了酶法测定动植物油脂中顺，顺1，4-二烯结构多不饱和脂肪酸的方法，实际上就是指具有ω3和ω6型多不饱和结构的亚油酸（9 12-十八碳二烯酸）和亚麻酸（9 12 15-十八碳三烯酸）系列。本标准不适用于油脂中ω8和ω9型多不饱和脂肪酸及含有支链脂肪酸的测定。
