Introduction of GB 31654-2021
本标准规定了餐饮服务活动中食品采购、贮存、加工、供应、配送和餐（饮）具、食品容器及工具清洗、消毒等环节场所、设施、设备、人员的食品安全基本要求和管理准则。
本标准适用于餐饮服务经营者和集中用餐单位的食堂从事的各类餐饮服务活动，如有必要制定某类餐饮服务活动的专项卫生规范，应当以本标准作为基础。
省、自治区、直辖市规定按小餐饮管理的餐饮服务活动可参照本标准执行。
