本标准修改采用ISO 3093：2004《小麦、黑麦及其面粉，杜伦麦及其粗粒粉　降落数值的测定Hagberg-Perten法》（英文版）。
本标准代替GB/T 10361-1989 《谷物降落数值测定法》。
本标准规定了采用降落数值法对谷物中α-淀粉酶的活性进行测定的方法。
本标准适用于谷物，特别适用于小麦、黑麦及其面粉、杜伦麦及其粗粒粉。本标准中规定了全杜伦麦粗粒粉和全麦粉的粒度。
本标准不适用于低α-淀粉酶活性的测定，有关方法可参照ISO 7973。
本标准与GB/T 10361-1989 相比的主要变化如下：
———增加了方法的适用范围；
———增加了液化值的概念；
———规定了具体的粉碎样品操作过程；
———增加了不同海拔高度地区的校正公式及降落数值和液化数值之间的换算公式；
