本标准规定了食品和食品模拟物中丙烯腈单体的测定方法。
本标准适用于水性食品模拟物、脂肪性食品模拟物橄榄油、其他脂肪性食品模拟物、模拟物D(如:合成甘油三酯混合物、葵花籽油和玉米油)以及液体和固体食品(如饮料和软黄油)。
本标准中丙烯腈单体的含量表示为每千克食品或食品模拟物中含有丙烯腈的毫克数。
根据应用的检测条件(见8.2.3 中注),本标准适用于食品模拟物中丙烯腈单体最低含量为0.005mg/kg~0.010mg/kg或者更低含量的定量测定。对于所提及的食品中丙烯腈单体测定,一般可以达到0.020mg/kg的测定低限。
