本标准规定了食品添加剂乳化香精的技术要求、试验方法和检验规则等内容。本标准适用于由食用香料（或不加）、食用油、比重调节剂、抗氧化剂、防腐剂等组成的油相和由乳化剂、防腐剂、酸味剂、着色剂（或不加）、蒸馏水（或去离子水）等组成的水相，经乳化、高压均质制成的乳化香精。乳化香精用于饮料、冷饮品（不含色素）和软糖等食品中作为加香、加色、加味和使之混浊（或仅使用混浊）之用。
